Whole Grain Biscuit Workshop

Length - 45 min

Cost - $25per person

The week before the event, I will email you a PDF of the recipes that we will be creating, as well as a link to our virtual room that our workshop will be taking place in. You have the week to organize getting the ingredients and think of any questions you may like to ask during the workshop. We will spend about 45 minutes of our morning together, physically going through the motions of creating the most flaky, delicious treats.. Just in time to get those fresh biscuits baked and enjoy a relaxing brunch without having to have left your own home..(mimosas anyone?) I will also talk us through how to make fresh, cultured butter -- the recipe will be included in your booklet if you'd like to join along in creating some for yourself. A bonus fresh ricotta recipe is also included in your recipe booklet. All you need is a computer in front of you, and your ingredients.

Sweet + Savoury Galette Workshop

Length - 1.5hrs

Cost - $25 per person

A fun, hands-on baking workshop focused on a flaky pie dough that can be used for sweet or savoury preparations -- cozy in your own kitchen. 
The week before the event, I will email you a PDF of the recipes that we will be creating (Buttery Pie Dough, A Sweet Option, A Savoury Option, and a Bonus Cultured Butter Recipe), as well as a link to our virtual room that our workshop will be taking place in. You have the week to organize getting the ingredients and think of any questions you may like to ask during the workshop. Depending on the amount of conversation created, we will spend about 1.5hours of our day together, physically going through the motions of creating the most flaky, delicious, sweet and savoury treats with a versatile dough that can be used for a number of applications. We will discuss the different applications this dough can be used for. Both treats that we create in this workshop can either be baked for dinner and dessert that evening, or they can be frozen for a quick and effortless snack later in the month. All you need is a computer in front of you, and your ingredients

Croissant + Danish Workshop

Length - Spread out over 3 days. Day 1 is an instructional video.
Day 2 we gather for 2.5 hours.
Day 3 you can bake everything, or shape and freeze it. 

Cost - $75

In this workshop, we will be making delicious, buttery treats and getting you comfortable with the whole process of making croissants and danishes so that you can adapt the recipes and flavours in your own kitchen. You will have the option of baking everything off on the third day, or you can freeze some of the products and pull them out to bake fresh for a decadent brunch, weeks later. 

Day 1 You will be getting started with your croissant dough via direction from a private video link that I will send you the week prior to the workshop. You can fit this part of the workshop into your schedule wherever it works for you on the Friday. It will require about 30 minutes of your day. The video link will demonstrate how to go about getting your dough and butter block started for your croissant dough, and then putting them in the fridge for the night.

Day 2  We will convene as a group in an online classroom (the link also being sent out to you the week prior to the workshop) to go through the steps of mixing our danish dough by hand, and folding in all of the flaky layers of butter, as well as rolling out our croissant dough. Our online session as a group will run for approximately 2.5 hours. Any and all questions are welcome. This day will involve quite a bit of rolling, and give you a good upper body workout! Have your favourite rolling pin at the ready! I will demonstrate how to cut and shape your croissants, as well as shaping techniques for your danish dough which you will be doing on Day 3.

Day 3 This day is a choose-your-own-adventure. You will have quite a bit of product to bake off! You can choose either to roll out, proof, and bake everything, or you have the option to roll, shape and freeze it, or freeze the doughs how they are as blocks for use later in the month. Our online group session will be recorded, and you will have access to it for a month in case you need to jog your memory on the different steps involved.

What do I "get" out of this workshop?

You will gain the tips, tricks, and recipes to make beautiful and delicious danishes and croissants. You will receive a recipe booklet in the form of a pdf containing all of the recipes from the workshop, a grocery list to get you prepped, as well as a variety of options you can flavour your croissants and danishes with.

What tools do I need for this workshop?

Rolling Pin, Mixing Bowls, Knife, a bench scraper would be handy!, Baking Trays, Fridge, Oven, Scale, Parchment, Ruler, Computer.
